This is me on my horse at the house….. Well if anyone has slacked more on a blog it has been me. I have dared to not write in this since September. Yes, there are many excuses, but I really did not realize the upkeep and loyalty that you need to maintain a blog.
BUt I do ask of your apologies this once, and last time dear readers, which many of which I am certain I have lost.

But if any of you may be reading this , I might as well recap the year since we left off in September:

I have baked many cupcakes, but have been too lazy to write about them. (Shame on me)

Pineapple perfection!!!!

I decided to make a pineapple cupcake… First I forgot that I ever had had a stand for my mixer that never ever knew about. So, I have been using it manually, very painfully, the whole time I’ve been making cupcakes! Well as Ive been making more and more complicated cupcakes with more ingredients so this discovery was a life-saver.
This cupcake has a difficult ingredient (pineapple) with it’s hairy kind of fibers that are hard to work with. It has such a strong flavor you only need a few chunks of pineapple to have you feeling as if you are in the Tiki Room! With a tangy cream cheese frosting! Fab… Well I apologize again, loyal readers, this blog has been on a break. I have been so busy lately, I can’t even bake so once again I apologize.

Lemon cupcakes!

I just put a batch of lemon cupcakes in the oven… I don’t know what they’ll taste like yet. They are super lemony and seem to have some potential. I made a small flaw and overflowed… Oh wait… Just tried them and they are delish!!!!! I have no cream cheese so I’ll make the frosting tomorrow! Woohooo, another win!

Oreo cookie cupcake confusion!

Well,I went at it today. I decided to take on the Oreo cookie cupcake and well, it ended up tasting very much like corn bread. Ok, I started with the recipe And just drifted off a little when I added buttermilk, of course for moisture. This is not the first time I have added buttermilk to a recipe, but wow…it overpowered the cookie taste. The frosting is really awesome however. It is a thick butter cream with tons of body. It called for cut up ores in the frosting as well and when I “plated” my little cake it looked as though it was topped with a scoop of homemade ice cream. Now, I am not saying this is a horrible throw away cake. I don’t think it will win any awards but it will satisfy the kids and parents at my brothers back to school night Wed. Yikes…I do get very nervous when a mouth gets into position to taste, I mean seriously we all expect a “rock my world” experience and when we don’t get it we are really bummed. I think as humans we covet our food. I will admit, I want people to covet my cakes. My brother said these were NOT my best, but he ate three when he thought I wasn’t looking. My mom loves cornbread AND ores so she was loving them. I guess I will hide in the multipurpose room at back to school night and watch for a sign any sign to help me conclude the Oreo cupcake!

A sad beginning to the new school year… :’(

Well sorry AGAIN for the long delay….. I hope you will understand. After coming home from an ” all you can eat” cruise, I couldn’t wait to love on my lonely dogs. Rolling into the driveway, I literally leaped like an extremely flexible ballerina( which is not ever the vision associated with me) to see those beautiful faces.Long story short, the newer of the two dogs was hit by a car and was killed. If I could have a picture of my face when you mention her name it would be depressed and red and wet from the streaming tears. I loved her so much and so did our other dog Shelby who raised her more than me even though they were not related. Whew that was a mouthful! Well that is the reason for the horrific delay and longing of posts. Also I am now in school and have loads of homework already!!!!

I have made a cookie pie( no flour for cupcakes) for those people who hurried Bella while we were gone and rushed to the 24 hour vet office to attempt at saving her. I am so thankful for their big try for a dog they didn’t even know. Keep us in your prayers and I hope to make some cupcakes soon.

Here I am, sitting at a friend’s house in Seattle. I have been on a vacation for 7 days, with an all-you-can-eat buffet! Yum! There were a few cupcakes on the cruise, but they weren’t quite up to my standards. I have decided that they need a cupcakery there. Everything else sugar-related was fabulous! There is going to be some serious baking as soon as I get home – after school, that is.

Painful lesson learned in cupcakes.

Well today I thought that nothing could get any better. I had sold all 4 batches of the “nutty bunny” cupcake. I had business awards coming my way for fastest up n coming enteruprinurer of the year…not. The day started with diliveries. Oh, btw let me tell you that me and my family almost got in a huge accident. I have never been so thankful, thankful that we stopped when we did. The ladies in the two cars were ok, but the cars were thrashed. I also would like to share with you the very simple fact that the cupcake is different for everyone. Ok seriously, all of you have different needs when it comes to being satisfied with the little cake. VERY high maintenance people we are. I think we have all raised the bar on taste since the food network started to catch America’s attention. Ok, let me take you back to where I began…my day. I was finally delivering my last batch ordered from a good and loyal friend and a very wonderful supporter.:) Now this was a special batch, because she was going to take as a gift for an office staff. Imagine if you can the perfect “lookin” cake all whipped up into a frenzy. I had placed them in my special carrying case and I was ready to present the cupcakes. I got out of the car and out came the very excited client with of course, high expectations. After all, I had built them up quite a bit. She reached for the case as to take a highly anticipated peek and the bottom of the case dropped out. I’m sure you can guess that all the cupcakes hit the groud and the ground was covered with drit and PINE NEEDLES! Well, I am making a new order for her but WOW…really?????? I feel exhausted,slightly overwhelmed and excited at the challenge to please, in the way only the perfect cupcake can do. I have discovered this could take me my entire childhood and beyond as I eagerly watch the eyes and expressions of the reciepients who dig in and find there is more to pleasing their taste buds than meets the eye!

What I like to call the Nutty Bunny!!!

This cupcake thing is awesome. You get this warm, fuzzy feeling when someone tries your cupcake. Yesterday I created this masterpiece called the Nutty Bunny. It is a carrot cupcake with cranberries, raisins, bananas, almonds and walnuts with a cream cheese walnut frosting!!!!!! It is so yum! People licked their liners clean when they tasted them. They are very homestyle and the cream cheese frosting people have asked for quadruple the amount!
Well this one is definitely out of the park!

I am so sorry for the horrible delay. We have had a break from cupcakes. Technical difficulties have held me back from blogging. The cupcake competition went well but sadly, I didn’t win. What a wonderful event though and very inspirational! I am asking you to consider going to this event next year! If you are interested in more details leave a reply.

The next cupcake I am going to bake is the carrot- nut cupcake with cream cheese frosting. We have lots of home grown carrots to use and I am craving that.
